On February 22, 2021, Health Canada’s Food Directorate issued the legislative amendment “Notice of Modification to the List of Permitted Food Additives with Other Accepted Uses to Enable the Use of Potassium Polyaspartate in Wine”. The use of potassium polyaspartate was approved to inhibit the formation of bitartrate crystals in wine.
