Canada Enables the Use of Pectinesterase and Polygalacturonase Enzymes in Certain Fruit and Vegetable Products

On September 28th, 2023, Health Canada’s Food Directorate issued a regulation on the  “Use of Pectinesterase and Polygalacturonasein Certain Fruit and Vegetable Products”. The regulation amends the list of permitted food enzymes.

The scientific assessment summarizes the following key points:

  • Authorizes the use of the enzymes pectinesterase from Aspergillus oryzae AR-962 and polygalacturonase from Aspergillus oryzae AR-183;
  • Allowed in the processing of fruit and vegetable products such as fruit juices, vegetable purées, wine, etc.;
  • The maximum allowed limit of the enzymes is established as Good Manufacturing Practice (GMP);
  • The data concludes the safety of the use of enzymes in food for human consumption.

The regulation is effective from September 28th, 2023.
