Canada Modifies the List of Permitted Food Enzymes to Extend the Use of Lipase from Candida cylindracea to Certain Cheeses

On January 11th, 2022, Health Canada's Food Directorate reviewed the safety assessment on the usage of food additive enzymes on dairy products and published the “Notice of Modification to the List of Permitted Food Enzymes to Extend the Use of Lipase from Candida cylindracea (previous name: Candida rugosa) to Certain Cheeses”. The regulation amends the List of permitted Food Enzymes.

 

The scope of the document highlights the following key points:

  • Extends the use of lipase from C. rugosa, and updates the name of this source to "Candida cylindracea" to reflect its most recent taxonomic identification;
  • Approves the use of lipase from Candida cylindracea in certain Cheddar cheeses; Dairy-based flavoring preparations; (naming the variety) Cheese; Processed (naming the variety) cheese;
  • The maximum level of use for the enzyme in cheese varieties and dairy-based flavoring preparations is established as GMP;
  • Information related to allergenicity, chemistry, microbiology, nutrition, and toxicology supports the safety of lipase from C. cylindracea (previous name: C. rugosa) for its requested uses.

The regulation is effective from January 11th, 2022.
