U.S. FDA Publishes Food Code 2022

On December 28, 2022, the U.S. Food and Drug Administration (FDA) issued the “FDA Food Code 2022” guiding to mitigate foodborne illness risks and provide a uniform set of national standards for retail food safety.

The document highlights the following key points:

  • Addition of Sesame as the 9th major food allergen as per the Food Allergy Safety, Treatment, Education, and Research Act of 2021;
  • To increase Consumer awareness of major food allergens as ingredients in unpackaged food; 
  • To revise the definition of intact meat, including enhancements to clarify time/temperature cooking requirements;
  • To reduce foodborne illness risk within food establishments, protecting consumers and industry from potential health consequences and financial loss;
  • To create uniform standards for retail food safety to ensure compliance;
  • Elimination of unwanted processes for establishing food safety criteria; 
  • Establishing a more standardized approach to inspections and audits of food establishments.
