Canada Modifies List of Permitted Enzymes to Enable the Use of beta-Amylase in Glutinous Rice-based Cakes

rice cake (1)On March 28, 2023, Health Canada's Food Directorate published a regulation on the “Notice of Modification to the List of Permitted Food Enzymes to Enable the Use of beta-Amylase from Priestia flexa AE-BAF in Glutinous Rice-based Cakes”. 

The document summarizes the following information: 

  • To extend the use of beta-amylase from B. flexus AE-BAF as a food enzyme in Mochi and Dango;  
  • The permitted source of beta-amylase from B. flexus AE-BAF has been modified to Priestia flexa AE-BAF; 
  • The maximum level of use in Glutinous Rice-based Cakes for this enzyme is Good Manufacturing Practice;
  • The regulation amends the List of Permitted Food Enzymes;
  • Safety assessment indicates the food enzyme is effective for its intended purposes. 

The regulation is effective from March 28, 2023.
