I think critical stage is knowing your market and where the product is going because you can develop the best tasting product no matter what that is, but if it doesn't end up being compliant in that market and you have to start from scratch, it could be really difficult to get back to where that beginning stage was when you had a great product, but it's not gonna work for a specific market. So to me, The critical step is knowing the market where it's going and making sure that you are putting a product that can go to that market there.
